Clary Sage (Salvia Sclarea) has a warming, dry, musky, bittersweet floral aroma. It is a perennial herb native to the northern Mediterranean, north Africa and central Asia. Although Clary Sage is now grown specifically for its essential oil, it has an extensive history as a medicinal herb dating back to the 4th century BCE. The distilled essential oil is used widely in perfumes and as a muscatel flavoring for vermouths, wines, and liqueurs. It is considered a fixative, and adds a warming note to a blend.
